Healthy, tasty (vegan-friendly) lunch ideas

The new year really gave me a kick up the bum when it came to eating healthily and taking part in regular exercise, and the motivation that I had to get fit at the start of January still hasn't worn off (yet).

A really big thing for me is to make sure that I'm eating meals that I actually enjoy so I don't end up begrudging the whole being healthy thing (no processed shakes, skinny soups or cardboard-tasting rice cakes in sight). The way I see it, if I can eat meals that taste nice then I'm much less likely to slip back into other bad habits, and my little theory seems to be working out pretty well so far. I know that a lot of people are still aiming to get fit at this time of the year so I thought it might be useful if I shared a few easy meal ideas on here - all vegan of course. These 3 lunch ideas are all super tasty as well as being really quick and easy to make, so hopefully there will be something below that you might enjoy!

Avocado on toast



This is my absolute favourite at the minute! I never realised before just how tasty avocados can be when paired with the right flavourings, and a pinch of salt and pepper along with just a squeeze of lemon creates the most delicious meal. It really is as simple as cutting the avocado in half and spreading - sometimes a little mashing is also required - along the toast before adding the extra seasonings. Aside from being really yummy, it also keeps me full for a long time and stops me from snacking between meals. You definitely need to give this a try!

Falafel and hummus panini


Again, this is really easy but tastes like a dream! I've always been a huge fan of falafel anyway so obviously this would be a winner with me but I'm sure most people would absolutely love the taste of this. The simplest way of making this meal is to buy a pack of paninis - you can get them from any supermarket - cut the panini in half, spread some hummus along the bottom, then cut two falafel balls in half and just chuck the sandwich it in a panini presser or a toastie maker for a couple of minutes. Your best option is to buy ready made falafel that doesn't require any cooking as you can just put it straight into the bread to save time. Yummyyy!

Fruit platter


Sometimes I fancy something a little lighter for lunch and on those rare occasions a deliciously juicy fruit platter is just enough to hit the spot. I'm constantly buying fruit at the minute as I've suddenly developed a real taste for it and I love the boost of energy that I get when I eat a load of fresh stuff in comparison to that horrible sluggish feeling I used to put up with after stuffing my mouth with carbs. Not that I'm anti-carb or anything, it's just that too much bread, potatoes, crisps etc can often zap me of energy! Anyway, to create this lunch idea just chop up whatever you've got in your fruit bowl - the more the merrier - and you should end up with a real flavoursome, colourful mix. Even though this is sweet enough already I just can't resist adding a drizzle of the Groovy Food Company agave nectar to amp up the flavour even more. It tastes SO good!

  1. I have actually never tried falafel before so that is on my list for my next ocado order thank you! I love the idea of avocado on wholemeal toast too as I am reallly trying to cut out 'naughty' carbs but it's so hard. I must admit I do love my snack a jacks though ;) xxx
